For Super Bowl this year, I didn’t want the traditional fried foods/chips and dip assortment. I decided to make homemade pretzels. Because it’s completely normal to make a snack that requires yeast and time to rise, right? I actually made half the recipe as written and the other half I stuffed with pepperoni and mozzarella cheese to make pizza bites.
Yield: ~6 dozen pretzel bites
1 1/2 cup warm water
2 T light brown sugar
1 package active dry yeast
3 ounces unsalted butter, melted
2 1/2 tsp kosher salt
4 1/2-5 cups all-purpose flour
5 quarts water
3/4 cup baking soda (trust me, I thought this was a typo also but it’s not!)
1 egg, beaten with 1 T cold water
1/2 T butter
1/2 T flour
1/2 cup milk
8 oz cheddar cheese
Combine water, sugar, yeast and butter in bowl of stand mixer and mix with dough hook until combined. Let sit for 5 minutes.
Add salt and flour, mix on low speed until combined. Increase speed to medium and continue kneading with dough hook until dough is smooth and begins to pull away from side of bowl, about 3-4 minutes (this can also be made by hand). Add additional flour by 1 T increments if dough appears too wet. Remove dough from bowl, place on floured, flat surface and knead into ball by hand.
Spray large bowl with cooking spray, add dough ball and turn to coat with oil. Cover with clean towel or plastic wrap and let rest in warm spot until doubled in size, about 1 hour.
Preheat oven to 425 degrees. Bring water to boil in large pot over high heat. Carefully add baking soda in increments as it will bubble.
Remove dough from bowl and place on floured, flat surface. Divide into 8 equal pieces (4 1/4-4 1/2 ounces each if wanting to be specific). Roll each section into a long rope, ~22 inches long. Cut dough into 1″ pieces. If wanting to make pizza bites, flatten each piece with rolling pin. Stuff with pepperoni and cheese, then fold dough over and pinch ends together. Set pieces on baking sheet and continue process with other sections.
Boil pretzel bites in water solution in batches, ~15 pieces at a time. Boil for ~30 seconds then remove with large slotted spoon. Place bites on parchment lined baking sheet and evenly space out the pieces. Brush tops of the pieces with the beaten egg and sprinkle with course salt if desired. Place into oven and bake for 15-18 minutes, until golden brown.
Remove from oven and let cool for ~5 minutes.
Melt the butter in a medium saucepan over medium heat. Add the flour and cook 1 minute. Whisk in the milk and cook until slightly thickened. Remove from heat and stir in the cheese until smooth and all of the cheese is melted. Season with salt and pepper, to taste.
**If cooking pizza bites, suggest serving with tomato/pizza sauce.
