Peanut Butter Quinoa Cookies (#14)

One of my favorite cookie recipes contains quinoa and are best when kept in the freezer, they are from Two Peas and Their Pod.  I saw this recipe on Pinterest and thought why not try another quinoa cookie recipe?  Bad idea!  Just stick with something that you already love…don’t go trying to be creative.  These definitely tasted healthy and did not feel like a splurge, which is what I want when I have dessert!  I made these back in the end of January and there are still some in my freezer.  : (

Ingredients:

2 cups cooked quinoa, chilled

1/2 cup peanut butter

3 T maple syrup

1/4 tsp salt

1/4 tsp cinnamon

3/4 cup rolled oats

1/2 cup shredded coconut (sweetened or unsweetened)

1/2 cup chocolate chips

Directions:

Preheat oven to 350 degrees.

Mix together quinoa, peanut butter, maple syrup, sea salt and oats.  Stir in coconut and chocolate chips.  Form into balls and place on parchment lined baking sheet.  Bake for 20 minutes.  Let cool completely on wire rack.
