Mexican Haystacks (#12)

First Pinterest recipe!  I’m much more of a fan of Foodgawker than Pinterest for recipes.  This recipe combined another one of my favorite recipes, crock pot pulled chicken.  It’s so nice to get home from work and have dinner already done, or at least halfway done.  It’s also scary to think all day about your house possibly burning down because you have your crock pot on all day.  But that may be the neurotic side of me coming out!  This recipe just compiles ingredients you would normally put in a burrito or a burrito bowl and stacks them up high.  Great for presentation, not so great for ease of eating.  Just combine into bowl and enjoy!

Ingredients:

Chicken

1 1/2 lbs boneless, skinless chicken breasts

1 1/2 T taco seasoning

1 jalepeno, seeded and diced

1 16-oz jar of salsa

1 yellow onion, diced

Rice

2 cups uncooked brown rice

1 bunch fresh cilantro, chopped

2 T lime juice

Toppings

romaine lettuce, cut into strips

red cabbage, cut into strips

2 avocados, diced

2 mangoes, diced

Directions:

Chicken: Sprinkle seasoning all over chicken breasts, then place breasts at the bottom of the slow cooker.  Scatter onion and jalapeno over chicken breasts. Pour salsa over top. Place lid on slow cooker and cook on LOW for 4-5 hours.

After 4-5 hours, remove chicken breasts from slow cooker and chop up. Place chopped chicken back in slow cooker and stir to combine.

Rice: Cook rice according to package directions.  Once cooked, combine with lime juice and cilantro.

Stack ~1/2 cup rice, top with chicken, top with avocado and mango, sprinkle cabbage/lettuce around haystack.  OR just pile everything into a bowl and mix thoroughly!
